The localities of Chittering and Gingin have a similar latitude to that of the Mediterranean – the birth place of the olive - making it an ideal location in Australia for growing olives.

White Dog Farm seized the opportunity to be part of this growing and exciting horticultural industry in Western Australia and planted 400 olive trees of five varietals specifically for the production of olive oil.  In 2004 the first olives were processed into oil and sent to the NSW Agricultural Institute for analytic testing with the results testifying WDF olive oil to be of the highest quality and to be extra virgin olive oil (EVOO).

What makes oil EVOO?

  • it is obtained from the fruit of the olive tree by means that does not alter the oil (no solvents or refining);
  • it has an acidity of no more than one percent (1%) (acidity reflects the care in the handling and pressing of the fruit - the lower the acidity level the better the quality of oil);
  • it is from the first pressing which is unaltered and retains its natural flavours (first cold pressed)
