

When planting our cabernet sauvignon and merlot vines almost 10 years
ago, our aim was to produce a quality wine that would compliment our
fellow wine producers in the Chittering Valley. In 2005 our first vintage
saw the birth of our signature wine, a dry, palest of pink bubbly made
in traditional champagne style.
Our current wines available for tasting and sale through our cellar
door or by ordering direct include:
2005 Reserve Methodé Champenoise – a pale pink bubbly resulting from
a minimum 3 years on lees prior to disgorgement, very fine beads, aromas
of fresh morning brioche with a hint of delicate berries and dry finish
on the palate.
2006 Methodé Traditionalle – made similarly to the 2005 Reserve a
very pale pink bubbly resulting from a minimum 18 months on lees prior
to disgorgement.
2007 Cabernet Merlot - dark cherry colour exhibiting ripe dense berry
fruit with soft earthy aromas and subtle oak with a supple tannin finish.
2007 Z Light Red - deep plum in colour, with a bouquet of fresh berries
and is velvety on the palate with a dry savoury finish. Best enjoyed
at room temperature, but can be slightly chilled to enjoy during the
warmer months.
